Identifying wood?

When you go to a wooded area to collect bark/logs/branches, do you just collect from the ground or take it off the tree, or what do you do? If you pick it up from the ground how do you know is something suitable for roaches? I've read pine and other softwoods are not suitable, so I'm wondering how do you make sure you pick the right thing and not something harmful.
