Am I correct in thinking that the standard white, fuzzy mold is only a problem because it covers/eats food and can be difficult for small roaches to walk through?

Yes, those are really the only problems with the common white fuzzy mold. It can also make big clumps of moldy substrate around the affected foods, which can be annoying. Smaller roaches, like certain Ectobiids, can actually get entangled in the stuff and die.
